Your past courses will continue to show in Canvas. To get to future or current courses, click on Courses. At the bottom of the list that pops up will be the option for "All Courses". Click on that and you will see your Fall 2021 courses. You will be able to click on the course to see content if your instructor has published their course. If your instructor is still building their course, you will not be able to access them until they are published. If you don't see a course you registered to take, it likely means the instructor has not yet started building their course.
